Chicory is a member of the Sunflower family (Asteraceae) and is found throughout out most of the continental United States. The flower blooms from June through September and is found in fields and along roadsides. The plant is origionally from Europe and is sought for its food uses. The roots can be roasted and ground as a coffee subsitute or additive. The leaves are also supposed to be edible.
