Chicken Cordon Blu

I prefer to buy these ready made at the Butcher Counter, but when they are not available, I do make my own.

2 Chicken Breast Halves, boned and skinned
2 oz Chedder or Swiss Cheese
2 oz Ham
1 Egg
Bread Crumbs
2 T Oil

Pound or press out the Chicken as flat as you can. layer ham and cheese on each breast. Roll up the breasts and fasten with toothpicks. Coat each roll with egg and Bread Crumbs. Brown in the hot oil, don't let it get too dark. Place in a small casserole dish and bake, covered for 30-35 minutes at 350. Serves 2.

Mashed Potato Casserole

10-12 Medium Potatoes
2 cups Sour Cream (Regular, Lite, No-Fat)
8 Oz Cream Cheese (Regular or Lite)
1 T Onion Salt
1 T Garlic Salt
Small amount of milk
1 T Butter or Margarine

Peal and quarter the potatoes. Simmer in water until tender. Drain and mash with butter and small amount of milk. Add remaining ingredients and beat well with mixer. Place into a 2 1/2 quart casserole or three one quart casseroles. Dot the top with Butter. Bake in a 350 oven until bubbly. This freezes well and keeps that way for quite a while. I make one and freeze the rest until I need them. Serves 6-8.

Honeyed Carrots

1/2 Pound Baby Carrots
1/4 Cup Honey or Jelly (flavor of your choice)

Cook the carrots in a small amount of water until just tender (be very careful not to overcook them). Drain the water and add the honey or jelly. Place in the oven for a few minutes, or heat in the Microwave for a minute just until the jelly melts. Stir to coat the carrots and serve. This serves 2-3.

Lemon Dip

1 Tablespoon Corn Starch
3/4 Cup Sugar
3/4 Cup Boiling Water
1 Egg - beaten
1 Tablespoon Butter
3 Tablespoons Lemon Juice

Mix corn starch and sugar in a 2 cup microwave safe cup or bowl. Microwave on high for 2-3 minutes until the mixture clears and thickens. Stir often and watch carefully as it boils over easily.

Add a small amount of the hot mixture to the beaten egg and mix thoroughly. Return the egg mixture to the remaining hot mixture and stir completely. Microwave of high for 1 minute, stirring at least twice.

Add butter (or margarine) and lemon juice and mix completely. Serve warm or cold with fruit chunks.

We like Melons, Strawberries, Bananas, and Peaches but I'm sure there are a lot of other things that will work just as well.
