Eggs A La Maiden Fair

4 eggs
4 slices of ham or Canadian Bacon, heated
2 English Muffins, split
2 Tablespoons butter or margarine
2 Tablespoons Flour
1 Cup milk
4-6 ounces grated cheese - we prefer mild cheddar
Melt the butter/margarine over low heat or in the microwave. Remove from heat, add the flour and stir until smooth. Add the milk slowly, stirring until smooth. bring to a boil stirring constantly until it thickens. Add the cheese and stir until melted and smooth. Poach or Shir the eggs. Toast the muffins. Place two muffin halves on each plate, top each with a slice of meat, and an egg, pour the sauce over and enjoy.
